What do you do with air roots when repotting orchids?

You can leave them outside of the pot, and/or put some of them inside the pot; but whatever you do, don’t trim them. Air roots are perfectly normal for orchids, and there’s no need to do anything with them when repotting. These roots help the plant to absorb moisture and nutrients from the air, so they’re actually quite important!
