Do orchids re-bloom on the same spike?

Yes, orchids can re-bloom on the same spike. After an orchid blooms, it is normal for the bloom spike to turn yellow and die back. However, if you cut the spike back to just below a node (one of the many bumps along its side), the plant will often make an offshoot and re-bloom.
